Banana Chocolate Chip Fiber Muffins

Did you know as adults, we’re supposed to consume about 25 grams of fiber daily?. Most adults do not eat the minimum amount of recommended daily fiber. This recipe is not only delicious; one muffin contains 9 grams of fiber. That’s one third of the recommended amount of fiber in just one delicious muffin! This recipe is adapted from F Factor’s Mocha Chip Muffin.

Servings: 12 muffins

Active Cooking Time: 15-20 minutes

Ingredients:

1 medium banana, mashed

1 cup yogurt

2 eggs

1 tbs vanilla extract

1/2 cup oats

8 GG Bran Crispbread, pulverized into sprinkles (these can be found on either Amazon or local health food markets

1 tbs sugar

1/2 tsp baking soad

11/2 tsp baking powder

1/4 semi-sweet chocolate chips

Preheat oven to 400 degrees. Prepare a 12-cup muffin pan with baking cups and set aside. I bake a dozen for the week ahead. I freeze half of them so I have another 6 for the following week.
